The term sounds like exactly what a hardware founder needs, which is why founders search for it, and why it is worth being precise about what an EMS partner does and does not do.
What an EMS company actually does
Build to print. Those three words carry the whole model. An EMS partner manufactures the design as given, at the quality level agreed, at the volume ordered. Good ones do it superbly: automated assembly lines, incoming inspection, test coverage, clean documentation. What the model does not include is responsibility for whether your design is any good. Most EMS terms of sale say this openly: design analysis, where offered, serves their manufacturing process, and regulatory compliance stays entirely with you. That is not a criticism. It is a division of labour, and it works well when you hold up your side of it.

What to look at when choosing an EMS partner
Quality certification such as ISO 9001 as the entry ticket, not the decision. Real test capability, because assembly without testing ships your failures to your customers. New product introduction (NPI) support, meaning they have a process for first builds rather than only mass production. Minimum order quantity (MOQ) that matches your stage. Intellectual property terms in writing. And communication you can actually work with across time zones, which sounds soft until the first problem happens at 3 a.m. your time.
